One wine cellar was created for the adjacent restaurant called Paisano’s.

Witness True Craftsmanship in these High-End and Meticulous Dining Room Glass Wine Cellar Cabinets
The Pechanga Resort restaurant wine cellar project was a colossal undertaking, spanning over four years and involving collaboration with the esteemed architectural firm Delawie. The challenge was to create five distinct wine cellars within the resort, each tailored to its respective dining venue while maintaining a cohesive design language. The project demanded precision, creativity, and adaptability, given the evolving nature of the space as it was being developed.
Within the four-year conception of this project, several changes had to be made in the process in terms of cooling units, glass enclosures, wood finishes, lighting, etc. “Realistically, we were going off of what we were going to accomplish if the space allowed it to happen. Looking at the place, you really have no idea what’s above it, what you’re going to do, how you’re going to run your mechanical and ducting and set your cabinets in place, et cetera. But that’s what we specialize in. We make it work no matter what. And that’s what all the other trades on this project had to do as well. So, everyone came together and made it into an unbelievable looking project.”

For the Pechanga project, Vintage Cellars opted for a sophisticated blend of materials and configurations to achieve both aesthetic appeal and functionality. The racking systems were meticulously crafted to complement the high-end finishes of each dining area, ensuring a seamless integration with the overall design.
Matching the wood stains on the project site was part of the challenge, but Vintage Cellars’ skillful team achieved the exact shade that you won’t spot the difference! “It was a little challenging because they used a lot of plywood. But we use a lot of hardwood and plywood mix, so you get a lot of different colors using hardwood compared to just sheets and ply that come in the same grain. For this, we had to bleach some wood to make it match, which took a while, but it all worked out.”
Vintage Room’s Wine Racking System
The Vintage Room boasts a ceiling height of 120 inches and a bottle capacity of 864. The racking system is constructed using walnut plywood and hardwood, providing a rich, elegant appearance. One of the standout features is the seam in the side panels, which adds a touch of visual interest while maintaining structural integrity.
The wine is displayed using floor-to-ceiling mounted Vintage View Vino Series racks with triple-deep wine pegs in a golden bronze finish. The sliding glass doors not only enhance the room’s sophistication but also ensure easy access to the collection.
Chef’s Table Wine Racking System
The Chef’s Table at Great Oak Steakhouse gives a view of private dining into the open kitchen. In the middle of this room is an exquisite dining table that allows you to sit between both the wine cellars and an open view to the whole kitchen. This means that while enjoying your food, you can also enjoy the action that takes place before the courses are served.
Offering unparalleled dining experience and perfect for a top-level steakhouse, Chef’s Table’s wine cellars have a total bottle capacity of 576. The wine cabinets feature recessed top and bottom plates, brown color power outlets, and are enclosed in glass walls, creating such a striking, fine dining room glass wine cellar.
The racking system employs double-deep wine pegs in golden bronze, mounted on floor-to-ceiling Vintage View Vino Series racks. This design choice not only maximizes bottle capacity but also ensures that each label is prominently displayed, enhancing the dining experience.
The LED Lighting System
To enhance the beauty of the restaurant wine cellar and highlight the wine collection, proper lighting is crucial. In the Pechanga dining room glass wine cellars, LED lighting is recessed within the cabinets, strategically placed to illuminate the wine bottles without causing heat damage.
The lights that run along the front are designed to wash down the front of the bottles, highlighting the labels and creating a warm, inviting glow. This careful consideration of lighting ensures that the wine cellars not only function optimally but also enhance the visual appeal of the dining spaces.
Efficient Glass Doors and Enclosures for a Sophisticated All-Glass Wine Cellar
Regulating the temperature in the restaurant wine cellars posed a few challenges but nothing that the team cannot overcome. At first, Vintage Cellars were contemplating about whether to install one cooling system for the entire space. But then, although the temperature would be regulated for the wine collection, it won’t be for the guests if the dining area is at 55 degrees. The client’s goal is to create a private dining experience within the restaurant, and this will not be possible in such condition.
To achieve this, Vintage Cellars thought of creating a dining room glass wine cellar in each designated area. The glass doors and enclosures are a huge part of the solution. Not only did the glass-enclosed wine cabinets add aesthetic appeal, but they also allowed for the cooling systems to work efficiently in each restaurant wine cellar.
Almost the same, but not quite…
All the restaurant wine cellars in the Great Oak Steakhouse are built almost the same, with one difference—the four wine storages in the Chef’s Table and Paisano’s have half-inch frameless glass doors, while the restaurant wine cellar inside the Vintage Room has dual-pane glass sliding door with metal frame.
The dining room glass wine cellar in the Vintage Room uses a dual-pane glass because the temperature is more controllable within a dual-pane glass environment. They are designed specifically for long-term wine display.
A different vendor built the glass doors, while Vintage Cellars did the glass enclosures for the wine cellar in restaurant. This collaborative effort certainly made the whole project the most amazing one for the team so far.
Powerful Wine Guardian Cooling Systems for the Exquisite Restaurant Wine Cellars
Maintaining the perfect temperature is vital for preserving the quality of wine. But rather than cooling the entire space, which is counter-productive, Vintage Cellars decided to install a cooling system in each wine cabinet. This Pechanga project features five separate cooling systems, each tailored to the specific requirements of the different wine cellars. Vintage Cellars utilized Wine Guardian water-cooled systems, mounted above the ceiling and integrated into the insulated cabinets, which were custom-made in Vintage Cellars’ own shop. The team chose the water-cooled system, which uses chilled water to cool the space, to avoid exhausting lots of hot air into the space above.
These systems are designed to manage temperature and humidity effectively, preventing mold and mildew while ensuring the longevity of the wine collection. The use of water-cooled systems minimizes heat exhaust, making them an ideal choice for such a high-end project.
Installing the half-a-ton heavy cooling systems that sit in emergency drain pans required the help of a thousand other people to install. Within the top of the wine cabinets are ducts coming through on the left and right side of the enclosures for the supply and return.
Restaurant Wine Cellar for Paisano’s Italian Restaurant
Pechanga Resorts and Casino bring guests a variety of dining experiences. Those who want to enjoy a slice of good old steak, the Great Oak Steakhouse is a great place. But if you want to have an authentic taste of Italy, Paisano’s offers a selection of Italian delis and wines, which are displayed in a gorgeous restaurant wine cellar!
Vintage Cellars also had the honor of creating a dining room glass wine cellar for this premier restaurant. Just the same, the team custom-built the huge wine cabinet in shop and transported it to the venue for installation.
A Gorgeous Wine Cellar that for an Elegant Space
Standing elegantly inside Paisano’s, the 119-inch wine display storage has a bottle capacity of 225. The racking system is made from white maple plywood and hardwood and utilizes triple-deep, wall-mounted Vino Pins in a golden bronze finish. The horizontal wine pegs allow for the wine bottles to be displayed horizontally with the labels in view.
Meanwhile, the steel-framed doors with full-length pulls and locks provide both security and style. Overall, this wine cellar in restaurant contrasts beautifully with the surrounding brickwork creating a visually appealing and highly functional storage solution
Installing the Wine Cellar’s Cooling System on a Brick Foundation
The beautiful brickwork definitely stimulated the team’s artistic vision. This arched nook became the bedrock of Vintage Cellar’s custom wine display cabinet.
The team has been quite meticulous in installing cabinet. Apparently, the aesthetics is less concerning than the mechanicals. Here, the ducts basically go in on the top for the supply and return of air. Then, the cooling system is installed behind the back wall.
